Jima boutique winery is located in the village of Kalomodia, Arta (a few kilometers from the Ambracian Gulf). The Tzima family manages vineyards in three different locations in Epirus, from its southernmost to its northernmost tip.
The visionary and creator Panos (WSET Diploma), along with his wife Christy Karagiannidou and his brother Nikos, have set the bar very high for the quality of the wines they produce, firmly establishing Epirus on our country’s wine map.
One of the estate’s premium wines is Dame Rouge IV (IV = fourth year of production), made from grapes of an overripe harvest, with a portion of the grapes undergoing the Appassimento method *.
This is a wine with personality, confirmed from the first moment by its deep crimson color and iridescent hues in the glass. It possesses intensity and vigor both on the nose and palate, offering generous aromas of plums, ripe figs, and spices, followed by notes of leather and tobacco leaves that complete its profile. Its youthful, muscular, and friendly tannins, combined with lively acidity and a prolonged finish, make it a wine to be enjoyed now, yet with significant aging potential.
* Appassimento is a method primarily found in Amarone wine in Italy, involving a dehydration process (spreading grapes on wooden racks) for weeks to several months, to dehydrate and concentrate their sugars and flavor characteristics.

"Les Filles de Cadix"
Sometimes the label on the bottle acts like the rhythmic and expressive instructions a composer gives at the beginning of a score; it guides you where to direct your taste and attention. With the label, the winemaker hints at their inspiration, what dreams they wanted to share when making the wine. Dame Rouge sends you straight to the woman in red. In French.
And yes, she exists! It’s not a piece, it’s an interpretation. The internationally rising Greek soprano Aphrodite Patoulidou wore the scarlet dress to sing one of the most beloved and virtuosic songs of the French repertoire: Les Filles de Cadix (The Girls of Cadiz) by Léo Delibes (1836-1891) to poetry by Alfred de Musset. In the first stanza, the girls from Cadiz visit bullfights and elicit compliments from the boys; in the second, they dance the bolero and reject the advances of the foolish who mistake them for mercenary.
The Greek singer interprets the playful and virtuosic poem with impeccable French pronunciation, Mediterranean temperament, and a rich voice that highlights it differently from the lighter French approach. The same could be said for the French grapes from the Greek terroir of the Tzima family: a Greek voice that gives another dimension to the French song.
Aphrodite Patoulidou is accompanied by the ERT National Symphony Orchestra, conducted by Michalis Economou.
